Rich Layers of cardamom, cinnamon bark, lavender, pink peppercorn and sarsaparilla unfold over a juniper backbone and our signature Three Cuts of Rose. Lifted by zesty orange peel and fresh orange, it’s vibrant yet grounded, sharp yet smooth.

Irresistibly complex with a dry finish, this gin is a wild botanical symphony where old-world tradition meets electric new energy.

Tasting Notes

Nose
Juniper, zesty orange peel, cardamom and cinnamon bark.

Palate
At the heart, juniper lays down its timeless piney punch — a classic anchor. But then the game changes. Zesty orange peel and fresh orange burst forward like sunlight slicing through clouds, delivering a citrus blaze that dances on the tongue. Just when you think you’ve found the rhythm, pink peppercorns explode with a spicy-sweet heat.

Finish
Sarsaparilla, deep and earthy, drifts in like a whisper from the forest, adding a nostalgic, rooty richness that lingers long after the last sip.

Serve

Two barrel-rested gins, made for winter sipping.Our Three Cuts Chardonnay Barrel Rested Gin and Three Cuts Pinot Barrel Rested Gin begin with our award-winning Founder’s Release Gin, then take on a deeper, richer character from time spent in wine barrels.The Chardonnay Barrel Rested Gin is smoky, citrusy and complex, with dry pine, leafy botanicals and a long, gently woody finish. It’s beautiful over ice, stirred into an Old Fashioned, or mixed into a Mandarin Gimlet.The Pinot Barrel Rested Gin is rested in ex-Tasmanian French Oak Pinot Noir barrels, bringing intense colour, rich flavour and a beautifully layered finish. Perfect in a crisp G&T, a Southside, or simply sipped over ice with a slice of citrus.The Iridescence Gin is vibrant, playful and wonderfully eye-catching, made for cocktails that feel a little bit celebratory.
